Omelette

Omelette

4 eggs
1/8 teaspoon of pepper
4 tablespoons of water
1 tablespoon of butter
1/2 teaspoon of salt
a little parsley


Beat the yolks until thick and lemon colored
Add hot water (one tablespoonfull to an egg), salt and pepper
Beat the whites till stiff and dry
Cut and fold into first mixture
Heat the omelette pan, add the butter, turn the pan so that themelted butter covers teh sides and the bottom of the pan.
Turn in mixture, spread evenly, turn down the fire and allow the omelette to cook slowly
Turn the pan so that the omelette will brown evenly
